Ojiya, the town of chijimi weaving. Hegi soba was born when "funori," a seaweed used in spinning linen thread, began to be used as a binding agent. It's a flexible soba with excellent texture.
Wataya's Hegi Soba is made using carefully selected buckwheat flour and funori, resulting in a noodle with strong resilience, flexibility, and smooth throat feel.
For the best experience, serve each portion on a "hegi" or bamboo basket. Depending on the season, accompany with tempura, wild vegetables, green onions, kinpira, chives, nori seaweed, or sesame seeds as condiments to enhance the flavor further.
