White soy sauce is carefully produced in traditional wooden vats using an age-old method. White soy sauce differs from regular soy sauce in that it is lighter in color and higher in sugar content. It is characterized by its amber color, which is paler than that of usukuchi shoyu because of the 9:1 ratio of wheat to soybeans. The amber color is even lighter than that of usukuchi shoyu because of the 9:1 ratio of wheat and soybeans in the soy sauce.
