Yamashiroya Nimonogasuki Koya Tofu

This set features liquid dashi and kōri tofu from Kyoyamashiroya, a company with over 110 years of history since its founding in 1904. Kōri tofu—also known as freeze-dried tofu—is made by freezing and drying tofu to create a traditional preserved food. Its light, spongy texture allows it to absorb plenty of dashi when simmered, resulting in rich, savory flavor.
