We use line-caught, fully matured bonito from Kagoshima, shaved into delicate flakes and gently simmered in a blend of additive-free honjozo soy sauce and refined white sugar. Though the seasoning is simple, we are uncompromising in our choice of ingredients, creating a rich, nostalgic flavor you won’t forget.
