Made from arabushi—bonito that has been boiled and carefully smoked—these flakes are produced in our own facility in Makurazaki City, Japan’s leading region for bonito flake production. Smoked over ten days in a traditional three-story kiln, they develop a deeply concentrated umami flavor. By taking the time to simmer them slowly, you can draw out a robust, richly layered dashi with a character distinct from that of thin-cut hana katsuo flakes.
