Kose Foods Koji Kome

Each grain of rice is carefully cultivated into koji. This dried rice koji is easy to store and offers excellent shelf stability. Unlike fresh (raw) koji, which contains about 25% moisture, this rice koji has less than 10% moisture, allowing it to be stored and distributed at room temperature. Its granular form makes it easy to measure and convenient to use. Perfect for a wide range of recipes, including amazake, pickles, and miso.
