Mirin is made from only three ingredients: "Takayama-mochi," the best sticky rice produced in Hida Furukawa; "Hidahomare," rice malt made by hand using the same rice malt; and rice shochu.
Mirin is brewed for 90 days using traditional methods that have remained unchanged since the olden days. After three years of maturation, this amber-colored mirin, full of flavor, has a deep sweetness and complex umami taste.
No chemical seasonings or food additives are used.
