This naturally brewed soy sauce is made in accordance with the strict organic standards of the Japanese Agricultural Standards, which strictly control the cultivation, harvesting, and transportation of raw materials to ensure that non-organic ingredients are not mixed in. The soy sauce is made using the "re-brewing" method, which involves adding matured "raw soy sauce" to koji instead of salt water, resulting in a soy sauce with increased flavor, darker color, and stronger taste.
